Taroutino was a surprise attack by the Russians so there is not going to be the usual order of battle reports and detailed descriptions like a regular set piece battle. It was, by all accounts, a messy affair with confusion being the norm. There are all sorts of details about what the Russians planned to do because they planned it and there are the reports available. The French did no planning because they didn't know the battle was going to happen.
The only way I can see to get specific details on the Polish would be direct from Polish sources. The other possible source would be in Russian, since it was the first "victory" for the Russian Army over the French in Russia and is celebrated as such. I'm guessing that any books specific to this battle would be in Russian.
